Lycopene is a strong anti-oxidant, used in nutritional supplements for prevention of certain disorders including heart disease and cancer. Lycopene exerts potent anti inflammatory effects, not only through its antioxidant action but also as a free radical scavenger, which may reduce cellular damage. Processed tomatoes, eg as an extract are better bioavailable than raw tomatoes, specially in combination with fat.
